Like many other Amazon cookbook aficionados, I like to buy cookbooks but I don't always cook from them. This Cooking Light book is an exception because it highlights only entrees, which is what I usually look for. There are photos for each recipe and sidebars giving quick recipes for side dishes to accompany the main course. Wonderful, ethnic ideas, lots of Mexican and Asian, and many good old American dishes like chicken pot pie! I will definitely use this book a lot. Excellent, fresh recipes.

I like 3 things about this cookbook, other than the obvious, that it offers light cooking recipes:
1. There is a photo for each recipe.
Sometimes it is a full page, but at least half page for each recipe - this is so useful when the recipe says shredded lettuce, shredded chicken, and chopped tomatoes. (page 45 Smoky Bacon & Blue Cheese Chicken Salad Pitas - the first recipe we made from this cookbook - we gave that recipe 4 stars by the way) You can get a clear view of the sizes of the shredded lettuce and chicken (not shredded into nothing), and see that the chopped tomatoes are not very large chunks.
2. It offers a full menu.
You aren't given just an entree, while you try to figure out what a good side or dessert would be. They offer two other suggestions with the entree.
Sometimes just the entree and one side make a well rounded meal, and they suggest something like Cold Beer - My husband wants to try that recipe! (page 55 Salmon Burgers, Summer Fruit, and Cold Beer.)
3. It gives a Game Plan.
Things to do for the entire menu in sequence ... ex ) preheat oven, start boiling water, chop this, while this bakes, steam vegetables, shred cheese. It is just a game plan though, a general sequence of when to start things, but I find it helpful.

The problem with this book is that they're confusing healthy food with very, very small portion sizes. the food isn't terribly healthy or low-calorie or low-carbohydrate, but when a serving size is half of a taco, it's going to appear that way.

“Dinner Tonight” – not at my house.

I’m looking for healthy recipes that are easy to prepare and can be made from ingredients you’d find at most grocery store. I don’t know whether the recipes in this book are keepers or not, but I can't waste my time and money finding out. Most of them contain 15-20 ingredients, expensive cuts of meat and seafood, and small amounts of obscure ingredients I wouldn’t know where to find. I can't come home from work, toss together a 10-15 -ingredient salmon recipe, and throw it on the grill - sorry, that's not my lifestyle.

I used to be a fan of the “Cooking Light” cookbooks, but at some point they lost touch with average, working cooks. I'm sure they're fine if you have lots of time on your hands, are independently wealthy, or can hire Gordon Ramsey to be your personal chef. These recipes are neither practical nor economical, and not for people with limited time and income. This one's going back to Amazon.

My husband and I looked through this cookbook as soon as we received it. We've already used two of the recipes and picked out several more to try in the coming weeks. It is a great cookbook for people who want to try something new. Recipes are easy to follow and most ingredients are already in your cupboard or easy to pick up at the store (which is a real plus...we hate cookbooks that use a lot of "stuff" that you don't already have or are hard to find/or expensive). We give this cookbook an A+!

This is my second collection of "Cooking Light" recipe book, and I love both. The book is full of beautiful pictures which helps me to prepare the food, and each recipe have very simple direction. Ingredients are also simple and healthy, meaning, foods in original form instead of adding a packet of soup mix or box of processed food to make the dish. Therefore, the most I love about this cook book is that if I wanted to replace few ingredients because we are gluten free, milk free, low sugar and no processed food family, it is very capable.

I have had this a few years now and I'm still finding recipes I haven't used. Prepare to stock up on herbs because a lot of healthy cooking requires cutting up a lot of them daily. We now have an herb garden in our kitchen. It saves money, and the herbs are right there to grab when you need them. This book will please meat eaters and vegetarians alike and there are of course the requisite chicken dinner recipes. This will become a staple in your kitchen and your waist and pockets will thank you later!
I love this cookbook! My husband and I went through and put post its on the recipes we'd like to try. Every recipe has a photo, which is so nice

The recipes are varied, so you don't tire of doing the same thing. There are also some classics. I love that they are healthier versions.
