Richard Olney, a member of the Academie Internationale du Vin, has been writing about wine and food since 1951, and his previous books include "The French menu cookbook", "Simple French food" and "Yquem".

For those who know his works, this is another recipe and commentary filled volume to challenge and expand one's cooking knowledge. I made the sweetbreads and they were a revelation. Also recommend a more purely recipe laden volume, "Provence the Beautiful Cookbook." Olney along with Elizabeth David and J. Child were the mid 20th century masters.

This book is excellent, but be forewarned it's the same exact text and pictures as Richard Olney's French Wine & Food: A Wine Lover's Cookbook, which is the paperback version of this same book but with a different title.

A very good write up about France's wine and their respective regions. The dishes/dishes featured are very authentic, meaning a well trained butcher is a certain prerequisite for preparing many of the recipes.

A Richard Olney classic.I have been a fan for years, and consider his cookbooks to be very special. I am going to continue to collect his writings. This one ,however has been overlooked , and deserves a prominent place in any cooking library. The fact that it was published in 1988 does not, any way diminish the educational value of his comments.
