My wife and I are kind of off beef...and I hate pork...so that leaves chicken and a very occasional fish dinner. (UGH)! This book has lots of decent recipies for chicken breasts and many are easy to prepare. I am retired and my wife loves her job so I'm the head chef in the house. I like "easy" but good. This book has many recipies that fit the bill. A few of them are "out there" a bit...or a bit "Hoity toity"...but all in all...we're enjoying the variety of chicken dinners I can prepare. I recommend this book...get some new ideas and make easy dinners to boot.

I thought because I saw the word "Chicken Breast" in the title that this book would have healthy low fat recipes but it doesn't, that was a disappointment to me as I usually eat nothing more than dried chicken breasts, baked potatoes and salads. I thought i would find some recipes to make my meals more interesting. I would say in the authors defense that this claim was not made, I just made a wrong assumption, I thought i'd make it clear in case someone made the same mistake I did.

I have had this cookbook for years and it's my go to for any chicken recipe. The Chicken, Mushrooms and cream is my all time favorite!

This book is fabulous! Every recipe I have tried in this book has turned our wonderful. Especially good is the Chicken Piccata and Mustard Tarragon Chicken Breasts. Highly recommended.
